You could use delight.el which *is* in GNU ELPA:

(delight 'undo-tree-mode nil "undo-tree")

use-package supports delight directly:
https://www.emacswiki.org/emacs/DelightedModes#toc7

The :delight keyword gets a mention in the leaf readme too,
so I suspect it's supported by that too.
