I’ve taken care of that on ‘core-updates’, which will hopefully be
merged within a week or so:

  https://git.savannah.gnu.org/cgit/guix.git/commit/?h=core-updates&id=2d546858b139e5fcf2cbdf9958a17fd98803ac4c

On that branch, you can run, say:

  guix build sed --target=i586-pc-gnu

and you get a GNU/Hurd binary.  \o/
