'org-latex-export-to-latex' consistently failing under org 9.7.5

Has exporting to latex changed in 'org 9.7.5' please?

I'm using this to export to latex -

And now its not working. I'm waiting about 15+ minutes for an export of one file of 2.8 mbs, but its just not exporting.

If 'org-latex-export-to-latex' is not the right command now, what is please?

I've tried my command on another project, and it works there, so I've gone back to the problematic file/project and then started splitting with the first chapter now working using my latex export command, and I gradually built it
  again till I've found where the problem lies. The upshot is that I've split the one file into three and its working again, albeit slowly.

what is off?

The problem was caused by the file/folder getting too big, and it was totalling 584.35 mbs! It was all because of git, because when I totally removed and deleted the git subfolder, the total has become 21.38 mbs. I've since deleted
  the git subfolder from my working projects, and they're exporting a lot quicker and safer too! I was only using git to provide a compilation date in the footer of each page, and I've decided that I don't really need it as its far
  easier to provide that date on the title page.
