I once desired this feature too (and tried to set the visible headers (or whatnot)... but since then I've managed myself with 'c' 'i'. I.e. keybinding c i runs the command notmuch-show-stash-message-id shows message-id in minibuffer (and is yankable with c-y) (copying using mouse in graphical emacs is harder, one have to go to *Messages* buffer to get it but...)
