%bootstrap-mes and %bootstrap-mescc-tools were removed in
f9fa47702be35ded14f8222a33d4da9207e2cce0 and
0062a2e0e09451ddde9b776fd99bfcc885db127e, respectively, but are still
documented in doc/guix.texi.
Discovered this while looking to create the graphs at
https://guix.gnu.org/manual/devel/en/html_node/Preparing-to-Use-the-Bootstrap-Binaries.html
