It's better if you paste the whole build log.

In the guix environment, inspect the C_INCLUDE_PATH variable (e.g. "env | grep
C_INCLUDE_PATH"), check if sdl2-mixer is in there.

Otherwise try passing "-DSDL_TARGET=2" to the #:make-flags, that could do it.
