On the Gnome desktop (and also, "Gnome on Xorg"), I seem to be getting
an average of about one frame per second with just the basic desktop
up, which makes the system essentially unusable.
glxgears *says* it's running at 160 FPS, but the screen is quite
clearly only updating maybe 3-5 times per second, so I have no idea
where it's getting 160 from. Additionally, even without the
proprietary Nvidia drivers, I've usually gotten several thousand FPS
on glxgears in other distros, so such a low number is *really* weird.
My monitor's refresh rate is 60, so it's not being capped by that.
XFCE is at least usable, but attempting to play even a 480p video
results in a slideshow, rather than a video. glxgears reports only
~120 FPS here, but actually moves smoothly, unlike under Gnome.
I'm including my config.scm, the output of glxinfo, and the output of
lspci, at the bottom of this message, but I'll sum up the bits that
look relevant first.
If there's anything else I should send to help figure out the problem,
please let me know.
From glxinfo, the graphics card vendor is listed as "VMware, Inc.",
and the OpenGL render string is "Gallium 0.4 on softpipe".
I'm running this on bare metal, not in a VM, so that first bit appears
to be very wrong. The "Gallium softpipe" bit seems to indicate it's
running in software rendering mode, from what I can gather.
I've verified that the nouveau module *is* loaded. In fact, it seems
to automatically start at boot, and I didn't have to manually start it
or anything, so I don't know why it's not properly picking up my
Nvidia card. Trisquel seems to have no problem with it, so it doesn't
look like it's an issue of missing proprietary bits or anything.
I've also verified that I am indeed in the "video" user group, just in
case that could cause issues.
My config.scm is pretty much the same as the "desktop.scm" example
from the 12.0 installation image, but without and encryption, and with
a few more drives. I don't expect that there's any major problems with
it, but I'm including it just in case.
Also, under Gnome, "top" is showing "..gnome-shell-r" as taking up 99%
CPU constantly. I think that's ".gnome-shell-real", but the text gets
cut off.
Under XFCE, nothing seems to be using anywhere near that much CPU.

This reads like your GPU requires a binary blob, but I can't say for
sure as I can't use a webbrowser to verify this.
I've tried some cards I have, the only one which is acceptable (and
still would require a blob) is GeForce 7300GS. Some other ATI and NVidia
cards are terrible, and I got rid of the the mainboards which could be
used with the PCI and AGP cards I have.
So if it is indeed because of a blob (someone else could be able to
verify this) you have two options:
Option one, probably not supported here but with some search you can
find out how to do it* nevertheless: Use the vanilla linux kernel and/or
some other option to make linux-libre let you use the blob.

Thanks for the reply; I hadn't even considered the issue of blobs
separately from drivers.
I just double-checked with a Trisquel liveUSB, and while it *does*
show the same "VMWare" and "softpipe" stuff in glxinfo, the
performance is much higher than on my GuixSD install, and it can even
play HD videos without a hitch. So it looks like blobs aren't the
issue. Which is nice, but does mean that it's probably a more
difficult problem to track down. :/

It is possible that this is a problem with our mesa package, which does
not use LLVM for the Gallium drivers. It might be worth changing this.
Unfortunately, this will result in quite a few rebuilds, so this change
would only be available in a few weeks.
Could you please send an email to bug-guix@gnu.org requesting that mesa
be built with LLVM for better performance of the Gallium drivers?
