I solved it by either,

* installing bunch of new fonts
* running fc-cache -f
* re-sourcing .guix-profile/etc/profile
* hash guix

or some combination of the above.

Now gotta kill and reload all those VNC connections to the server in case sourcing the profile somehow did it (not likely)...
