Hello.
Is it possible to have Thunderbird packaged in Guix? If so, why are we
still using Icedove?
The Debian wiki says that the trademark issues with Thunderbird have
been resolved:

Regards,
Sergio

As far as I know, the Mozilla Foundation simply accepted the Debian
builds as official. I am not sure the same is true for GNU Guix.
Please consider this exerpt from Mozilla's Trademark policy: [1]
You Must:
Choose branding, logos, and trademarks that denotes your own unique
identity so as to clearly signal to users that there is no
affiliation with or endorsement by Mozilla.
You Must NOT:
Use any Mozilla trademark or any part of any Mozilla trademark to
incorrectly suggest or give the impression your software is actually
published by, affiliated with, or endorsed by Mozilla.
Kind regards
Felix

I don’t know about Thunderbird, but the maintainer of the Firefox
packages in Debian is a Mozilla employee, which is likely why the
trademark policy doesn’t apply there.
