Maybe your computer is experiencing an OOM (out-of-memory). Maybe keep a system monitor visible (e.g. gnome-system-monitor or htop) and keep an eye on the memory & swap usage. Does the freeze coincide with high memory usage? Also, can you still hear your disk spinning after a freeze? (IIUC, that would indicate Linux is still issuing I/O to the disk so Linux did not OOP?
