I have the same problem -- for some e-mails, not all of them.
Using nnmaildir and offlineimap like you are.
I *think* I started having this problem after upgrading to Emacs 27, but
I'm not sure...
I'll post here again if I find a solution. In the meantime, I have
adopted your "dummy edit" function.
