Is it possible to show "overstruck" text in Emacs? (By "overstruck"
I mean text that has a line going through it, as if it had been
crossed out.)

I don't know if this is a font-feature ? Try
M-x customize-face RET default RET
and check the strike-through flag, at least I can see it.
