I noticed the Python completion will complete language keywords but
not my own variable names.

Is there is higher powered completion library that can handle variale
names in Python and/or C too?

For Python, I use PySmell[1][2] with AutoComplete[3].

Why are there so many choices?  I guess that is a good thing but it is
hard to know which is the best.

Because people just can't keep themselves from improving Emacs. ;-)
Choice is hard. Enjoy.
