Would it not be nice if the help text for completing-read (and similar
functions) mentioned which keymap it uses?
BTW, which keymap does it use?

Yes, it would be nice.

From the Minibuffer Completion node of the Emacs Lisp manual"
The function `completing-read' uses
`minibuffer-local-completion-map' as the keymap if REQUIRE-MATCH
is `nil', and uses `minibuffer-local-must-match-map' if
REQUIRE-MATCH is non-`nil'. *Note Completion Commands::.
