Manual specification, such as with facemenu, should go on the face property. However, automatic font specification -- anything equivalent in spirit to Font-Lock mode -- should set font-lock-face instead. The purpose of this is so that M-x font-lock-mode will toggle whether those faces actually appear in the display.
