In GNU Emacs 27 and before it worked to switch to European date format:
/Library/Application Support/Emacs/site-init.el:23:(defvar european-calendar-style t)
/Library/Application Support/Emacs/site-init.el:72:(setq european-calendar-style t)
which now does not get loaded, as *Messages* shows:

I'd presume that dumping is a problem:

Activating "(setq calendar-date-style 'european)" brings:
calendar-date-style is a variable defined in ‘calendar.el’.
Its value is ‘european’
Original value was ‘american’
Now I get in *Fancy Diary Entries* only:
Sunrise 06 Uhr 50, sunset 20 Uhr 05 at Friedberg (13:15 hrs daylight)
and on 4. of June:
Sunrise 05 Uhr 19, sunset 21 Uhr 28 at Friedberg (16:08 hrs daylight)
