I also had issues with priority faces. It is related to sub-optimal
regexp used to detect priority cookies.
I have the following in my config to speed things up:
(setq org-priority-regexp "^\\*+.*\\(\\[#\\([A-Z0-9]+\\)\\] ?\\)")
For the latex fontification, I never had issues, but you might play with
org-highlight-latex-and-related.
