Check your error messages. I think you have the above elisp wrong. It
should be
(add-to-list 'org-latex-classes
'("pulsememoir" "\\documentclass{memoir}"
("\\chapter{%s}" . "\\chapter*{%s}")
("\\section{%s}" . "\\section*{%s}")
("\\subsection{%s}" . "\\subsection*{%s}")
("\\subsubsection{%s}" . "\\subsubsection*{%s}")))
One set of () removed from around the entry. You added a list with a
single entry instead of adding the entry to the list.
With this change, it works fine for me.
