There is a variable you can specify:

,----[ C-h v org-latex-image-default-width RET ]
| org-latex-image-default-width is a variable defined in ‘ox-latex.el’.
| Its value is "0.9\\linewidth"
| Original value was ".9\\linewidth"

| Default width for images.
| This value will not be used if a height is provided.
