Hi, I was pleased to discover mpc through the NEWS for v23.2, as I
hadn't come across it before and it looks great. I can't find any
documentation though, and I'd like to customize the UI (e.g. I don't
want to display genres). Are there any info pages, html manual
somewhere, and does anyone know if I'll be able to easily tweak the
default layout?

There isn't any :-(

If you go and M-x customize-group RET mpc RET, you should find the
variable mpc-browser-tags which controls that.

It's not highly configurable, no.
