I'm using GNU Linux Debian.
I've just downloaded Emacs CVS trunk and have done the following steps:
make maintainer-clean
configure
make
make install
emacs -Q
C-x C-f RET
Now, click in 'File' and move horizontally the mouse to the other
options (i.e., Edit, Options, Buffers, etc.)
The text beneath menus disappear.
The text only appear again when you get out the menus (i.e., click
outside menu).
My last Emacs compilation was 2007-08-05 and it didn't have this problem.

What Gtk+ version, what theme? Do you use KDE and qt-gtk-engine? Have you
customized any foreground or background color? What colors do you have for
normal menu background and activated menu background? When you click on
"File" and the menu appears, is not the background for "File" the same as for
"Edit", "Options" etc. when you move the mouse horizontally?

The menu, menubar and toolbar background color is the same for all
menubar options when moving mouse horizontally.

I have the previous binary in other PC and it was also built with GTK
toolkit.
I've just tried to recompile Emacs CVS trunk in an old PC with Debian
(but with KDE 3.5.7) and the result was exactly the same.
Please, try to recompile CVS trunk in Debian (KDE).

I had the same behavior. Setting (tool-bar-mode nil) did the trick for me.

Well, there is no such thing, I guess you mean Gnome. In Emacs, do "Help" =>
"About Emacs" and you will see the Gtk+ version next to the text "This is GNU
Emacs ...".

I don't understand that sentence. Can you see "File" when you initially click
"File" in the menu bar? If you click "File" and move down the "File" menu,
does the text for the highlighted menu entries also not show? Screen shots
would help here.

I tried in another PC with another Style & WindowsDecoration, the
results are the same.

All highlighted text are visible.

The problem is related with the tool-bar-mode as Marius Glauser reported.
When tool-bar-mode is on, the problem happens.

I confirm this bug with GNU Emacs 23.0.50.1 (i686-pc-linux-gnu, GTK+
Version 2.10.6) of 2007-09-14 on escher, KDE 3.5.7 on openSUSE 10.2.
I just updated from the CVS trunk for the first time since the
multi-tty merge, and also since librsvg support was added, which I
also have configured; my previous build (same GTK+ and KDE) did not
have this bug. The bug is indeed related to the tool bar, but not
just having it enabled: when I detach the GTK tool bar, the bug does
not occur.
