Some people write documents where text is overstriked with backspace
(^H) characters, l^Hli^Hik^Hke^He t^Hti^His^Hs. Text viewers such as
“less” display this as bold text. Is there a way to properly view/edit
such files in Emacs?

Using man instead of woman? (man = manual-entry, or f1-f2?)

There is a misunderstanding, I'm not talking about manpages, but rather
about text files which use this overstriking.
