I put things like

%%% Local Variables:
%%% TeX-compile-command: "PDFLaTeX"
...other.lines.here...
%%% End:

at the end of some of my *.tex files.  My entry in TeX-command-list
is called "PDFLaTeX" with that capitalization, you might have a
different entry.
