`customize-face' uses the `weight' and `slant' properties only,
therefore I think they should be preferred over `bold' and `italic'.

That does make sense. Thanks.
By the way, that solved a problem I had for setting the face of Org mode tags
in italic. Putting slant italic instead resolved that! Thanks again.

OTOH, I've just done writing my own color theme and noticed that the
`weight' property does not work, whilst the `bold' one does.

My fault. I just had to write:
:weight bold
instead of
:weight 'bold
