I have a document in Org and I would like to add
an index exporting to LaTeX, I would like to control
the formatting of the entries in the index
as is done in LaTeX with the command \index, e.g.
\index{Actors!Jack Nicholson}
Any suggestions?

You can simply use \index{Actors!Jack Nicholson} in your
.org file. It will added verbatim to your .tex file.
Then compiling your index and your .tex file will add
this entry.
