Replace Ubuntu-supplied matlab.el

I would like to download and install the newest Matlab mode for Emacs 
from here: http://matlab-emacs.sourceforge.net/.
My Emacs already has Matlab mode, apparently provided på the Ubuntu 
package emacs-goodies-el. What would be the "correct" way of disabling 
matlab.el from emacs-goodies-el and installing the newer version in stead?

I think adding the new package earlier in your `load-path' would suffice.

Will that cause emacs-goodies-el not to load matlab.el when it sees that 
it has already been loaded?

Assuming emacs-goodies-el uses `require', yes.

But you don't even need to actually load the newer matlab.el, you just
need to install it in a directory that's in your `load-path' ahead of
the ubuntu version.

P.S. Don't forget to byte-compile matlab.el to matlab.elc
