Writing article in italian

Am writing an article in italian and custamalily use @-commands for the
appropriate accented letters.  Texinfo has the @documentlanguage command.

How should I proceed, and would I need to continue using @-commands
for accenting letters.

I think you should be able to type the accented letters directly if
you use @documentencoding UTF-8.

Add a line like this:

  @documentencoding UTF-8

near the beginning of the document, preferably right after
@documentlanguage.

There are at least two ways:

1. Use the C-x 8 prefix:

C-x 8 ^ e
==> ê

(For more info, try C-x 8 C-h, you will see a *Help* buffer open that
you can scroll through).

2. Define abbreviations for the particular mode you are using. In your
texinfo buffer, just do:

M-x edit-abbrevs C-m

and insert the abbreviations you want.

The C-x 8 method is complete, but somewhat cumbersome. You might
prefer using input methods, eg

C-\ italian-postfix

allows you to type

e'

and have it automatically be inserted as é

Thereʼs a whole host of input methods available, including ones that
cover all the latin accented characters, rather than just the Italian
ones. (info "(emacs)Input Methods") describes the details (including
how to activate input methods automatically).

The "italian-postfix" is indeed the best solution (using compose keys
is even better IMHO). But if you use it only within Emacs is the best
and more reliable solution.

BTW, all that is good provided you have a keyboard with an easy to use
bacquote character, since most of accents in Italian are grave ones.

Everyone has their preferences. Note also that along with the C-x 8
map, you also get a set of A- bindings which might be easier to use
(A- being ALT). And for yet more options: emacs-28 adds two new input
methods, 'compose' and 'iso-translate', which correspond to the X11 Compose
and C-x 8 methods, but without a prefix key. Choice is good :-)

Iʼm not sure I understand. If you want to programatically insert è,
then you just do

(insert ?è)

or even

(insert ?\N{LATIN SMALL LETTER E WITH GRAVE})

May use M-x set-input-method and M-x describe-input-method and try to find one of italian* input methods that work well your keyboard, so you will get scented letters easily. I use that all the time.

You don't *need* to use the @-commands. If you set the document encoding
correctly, you can use an extended character set:

E.g.

@documentencoding UTF-8

There is more information in the texinfo manual:

C-h i d m texinfo C-m i documentencoding C-m

For most output formats, this just works. For TeX output, you may need
to use

\DeclareUnicodeCharacter{<char>}{<macro>}

to define a mapping from the character with codepoint <char> (in
hexadecimal) to a TeX macro. E.g.

\DeclareUnicodeCharacter{3b1}{\alpha} % α
