I would like to have a function with a docstring that can get be set up with different
levels of detail. Thus the user can decide what type of information he wants to see
when using "C-h f". Can something be done with elisp code?

We currently don't have anything explicitly for that purpose (I've
already thought about doing something similar, for example when showing
the doc of `pcase`, where there can be a long list of pcase patterns).

Given enough effort: yes.
