Recently when I edit some php files, my emacs lags. Cursor disapears and
nothing happens for 10 seconds. I can interrupt it by hitting C-g, but I
couldn't find a way to know which function is running.

Is there a way to view a log of the last called functions ? Or to get a
backtrace when interrupting something ?

How about M-x toggle-debug-on-quit then C-g ?

Try enabling debug on quit from the options menu. Then when you hit
C-g, you bill bring up a backtrace.
