It's a fault in my configuration I suppose. 

So, what should I put in my .emacs to display correctly ISO 8859 characters ?
I use the International English keyboard and language.

I tried without success:

(progn (set-language-environment "Latin-1")
(set-frame-font "fontset-mac")
(set-keyboard-coding-system 'mac-roman)
(set-selection-coding-system 'mac-roman)
(setq file-name-coding-system 'utf-8)
(require 'ucs-tables)
(unify-8859-on-encoding-mode 1)
(unify-8859-on-decoding-mode 1)
(prefer-coding-system 'latin-9)
(prefer-coding-system 'latin-1)
(prefer-coding-system 'utf-8))

and 

(set-keyboard-coding-system 'iso-8859-1)
(set-frame-font "fontset-mac")
(set-terminal-coding-system 'iso-8859-1)
(set-language-environment 'Italian)
