It sounds like something is severely screwed up in your configuration, if the traditional Emacs keys don't work. Control-y should paste, and Control-x Control-c should quit. This is how Emacs is supposed to work on *every* platform, and there's certainly no intention that it not work on Aqua. If it's not working for you, you need to do some investigation into what's going on.
