For emacs rmail, what command is there in emacs that will sort
favorite correspondents from the hundreds of spam commercials?...

I use the rmail-spam-filter library, available here:

http://www.weizmann.ac.il/~eli/Downloads/rmail-spam-filter/

You could automatically put mail from favourite correspondents into a
separate folder by frobbing `rmail-automatic-folder-directives'.
