Take a look at preview-latex
<URL:http://preview-latex.sourceforge.net>. I doubt, however, that
the linear text representation of Emacs is something superbly suited
to presentations.

Sure. With add-text-properties and their ilk, but they are not
exactly supposed to be user-level functions.
