if you're referring to printing via Postscript (what you get when you
select "Postscript Print Buffer" in the File menu), then the variable
you want to set is ps-landscape-mode (you could have found this out by
saying "M-x apropos RET landscape RET", or by looking in the
"Postscript Hardcopy" section of the Emacs manual).
Another way of modifying this variable is to say "M-x customize-group
RET ps-print RET", select the "Page" group, then set the "Ps landscape
mode" option.
If you want to change the plain-style printing, you'll need to know
how to print in landscape mode via lpr, then set the variable
lpr-switches appropriately.
