Thanks to all who replied.

I'm going with the following format:

        (setq gnus-select-method (list 'nntp my_news_server))

So here's the final entry in my .gnus file:

(setq gnus-select-method
      (list 'nntp my_news_server
            'nntp-port-number 9119))
