I am trying to match parenthesis, however the highlighting is difficult to
see. Any idea on how to make the matching look very pronounced.

I have been using the following code

(show-paren-mode 1)
(setq show-paren-delay 0)

(require 'paren)
(set-face-background 'show-paren-match (face-background 'default))
(set-face-foreground 'show-paren-match "#def")
(set-face-attribute 'show-paren-match nil :weight 'extra-bold)
