Several solutions have been devised: flyspellbabel, flyspellxmllang,
autolangmode,guesslang, guessbufferlanguage. Have a look at the wiki
http://www.emacswiki.org/emacs/CategorySpelling 
I didn't try any of these packages, so I can't provide feedback.
