I added

(add-to-list 'auto-mode-alist '("\\.html$" . html-helper-mode))
(add-to-list 'auto-mode-alist '("\\.htm$" . html-helper-mode))


to my .emacs but opening html files leaves my emacs in html-mode and not
html-helper mode.

Any suggestions?

There is a way you can force a document to be opened in
html-helper-mode,
just insert <!-- -*-html-helper-*- --> at the top of your html code.

I know this is not "THE" solution, it's just a tip.
