I haven't looked into, but afaik it's hard to change this suffix/ program association as judged in posts here in the past year. (i myself like to be able to press Z or some other key to use zip/unzip.) hope someone can help on this. but in anycase, it is very easy to convert all your .Z files to .gzip.
