What should I do to make kdvi the default 
dvi viewer in AucTeX/emacs?

(setq tex-dvi-view-command "kdvi") in your .emacs should work.

I tried that but it didn't work, xdvi is still the default viewer.

M-x customize-variable RET TeX-view-style RET
