Ctrl-x 3 creates two columuns in which long lines
of text disappear off to the right... I'd like
them to wrap instead.  

How can I do this?  GNU Emacs:21.2.1 

Options -> Word wrap in Text Mode does not
help...

Type "M-x set-variable RET truncate-partial-width-windows RET nil RET".
