I am using the following function 

(defun lex-rainbow-delimiters ()
  "Configuration."

  (add-to-list 'load-path
     "~/bin/contrib/rainbow-delimiters")

  (require 'rainbow-delimiters)
  (add-hook 'tex-mode-hook #'rainbow-delimiters-mode)
  (add-hook 'latex-mode-hook #'rainbow-delimiters-mode)
  (message "+ rainbow-delimiters"))

This does not work.  I first have to load the latex file, then call
"M-x rainbow-delimiters-mode" to take effect.
