I'm a bit annoyed by the multi-level buffer menu that is displayed when
pressing Ctrl-Mouse1 and a lot of buffers are open. I'd rather just have
one long list. How can I change this?

It is not that hard to find. Just do C-h k C-mouse1 to figure out the
function bound to this press.

<C-down-mouse-1> at that spot runs the command mouse-buffer-menu
which is an interactive compiled Lisp function in `mouse'.
It is bound to <C-down-mouse-1>.
(mouse-buffer-menu EVENT)

Pop up a menu of buffers for selection with the mouse.
This switches buffers in the window that you clicked on,
and selects that window.

[back]

This gives you the right keyword.

Then do
M-x customize-apropos RET mouse-buffer RET

to continue with that clue.
