   Correct me if I'm wrong, but I don't think user-email-address even
   shows up in the smtpmail documentation.  I couldn't find it.

i think the var `mail-specify-envelope-from' is relevant.  for example:

(setq mail-host-address "foo.org"
      mail-specify-envelope-from t
      mail-envelope-from 'header)
