In org-mode one can use the emphasizing tags 

*word*   /word/   _word_

Is there anything to perform the opposite, playing down the text?

Not just there ...

Here it's gnus-emphasis-bold, gnus-emphasis-underline, and
gnus-emphasis-italic, respectively.

Do you mean removing the emphasising tags like [({delete-pair})] for
brakets?

I had meant making text less conspicuous than normal text (opposite to emphasize -
making text more conspicuous than normal text).

But now I am using footnotes and changing the footnote face.

I'm only aware of *bold*, /italics/ and _underline_. I think
they should be used with a lot of moderation, as should their
counterparts in printed/published text ...

Useful when one writes "forbidden" things and when the
moderator tells you about it you can say "What do you mean?
That's why it crossed over!"

But it doesn't work here so handle with care ...
