You can use something like
     (ispell-change-dictionary "croatian")

I think you'd need the 'aspell-hr' package in Debian. Also see:

it is better to reply to the newsgroup instead of any one member,
in case others can help more than I can, or if I'm busy and can't reply.

Emacs can help you with its commands.
Press C-h a spell RET
for a list of functions (commands) and variables (settings) that relate to spelling.
The list is commands than can be directly called by you.

For a fuller list use C-u C-h a spell RET
This will give the first list, plus commands and setting that are used
internally by the spellcheckers, but may be of use.

For information on a function press C-h v, for a variable, C-h a

(C-h means Ctrl-h in emacs's documentation).
