I have a small C project that I can build and debug with lldb. I'd really like to use
a more powerful debugger in emacs, but I'm not sure what would be my best option,
since I'm running on Apple M1.
Any suggestions?

I would generally recommend you use GDB, it has excellent integration
with Emacs. FWIW, I find its ergonomics superior to LLDB as well. But
I don't know if it entirely supports ARM macOS.
