Has anybody written any IDE-like convenience functions for running the
application associated with the current buffer? I know that ede
provides a Build Command for current target. What about a Project->Run
command?

I recommend mode-compile.el a customization-wrapper around
compile.el.
M-x mode-compile mostly does what you want and can be bound to a key
of your choice.
