Follow Stefan's advice:

(add-hook 'texinfo-mode-hook
           (lambda ()
             (push '("\\alpha" . ?α) prettify-symbols-alist)
             (push '("\\beta" . ?β) prettify-symbols-alist)))

This only affects the way "\alpha" and "\beta" are displayed, and you can 
turn it on or off with M-x prettify-symbols-mode .  If you want to turn it 
on by default, do:

(add-hook 'texinfo-mode-hook
           (lambda ()
             (push '("\\alpha" . ?α) prettify-symbols-alist)
             (push '("\\beta" . ?β) prettify-symbols-alist)
             (prettify-symbols-mode)))
