Hey there,
I have global-font-lock-mode turned on in my .emacs file, but the
coloring is less than ideal for minix. I have tried several different
ways to change the coloring, but nothing seems to be working. I was
wondering if anyone had any ideas -- I'm not sure if it's minix or if
it's me.

Tried M-x customize-group RET faces RET?
M-x list-colors-display RET lists all available colors. You
can't get more than listed there.
